Executive Chef Max Dallamore brings a wealth of experience in fine dining establishments, as well as exceptional interest and knowledge of viticulture and mixology. Through his career, Chef Dallamore has honed a distinct culinary style showcasing contemporary flair and refined techniques. He is proud to offer complex and layered dishes, ensuring an approachable yet elevated dining experience for guests of The Manse. Embracing the bounty of each season, Chef Dallamore’s menus are ever-evolving, promising a fresh and exciting culinary adventure with each visit.

Inspiration and Creativity

“The frequency of menu changes at The Manse allows me to stay inspired by the seasons. All dishes feel like a living, breathing entity for me to refine, as new products and techniques come and go through the calendar year. My dishes evolve from season-to-season, or even week-to-week.

I want our guests to eat with their eyes first. Every plate is a visual feast of texture, color, shapes, and varied edible materials. It brings a level of luxury to a meal that I wish for our guests to experience.”


Enjoy elevated breakfast dishes highlighting both seasonal local bounty and international inspiration. Expect dishes fitting of fine dining menus, full of flavour and texture. If you’re up early enough, fresh pastries may also make an appearance!


In the warmer seasons, our outdoor patio serves as the perfect backdrop to enjoy your meal and coffee surrounded by our tranquil gardens.

“I want Guests to experience the finesse of fine dining at 8 am, my background in fine dining translated over to breakfast has resulted in something very unique to The Manse; familiar flavours with very elevated delivery.”

Drink Service

Our in-house beverage menu features a curated selection of wines from near and far for your enjoyment through our property. If wine is not your style, local craft beers and ciders are available, as is a bespoke cocktail list with creative libations to enjoy poolside or to end your day.

Private Dining & Events

Available on Wednesday & Saturday evenings to both guests staying with us or not. Those joining us can enjoy an in-house inspired dinner menu. On these select nights, you will indulge in a multi course prix-fixe menu. These featured dining experiences highlight Chef Dallamore’s innovate dishes, and promise to be a memorable journey of flavors and sophistication.

Seating is very limited and advanced reservations are required.


This experience is a set menu. Everyone at your table will enjoy the same menu. Due to the nature of this experience, dietary restrictions and modifications will be politely declined.
